[Lincolnparkdc] Cabbage

* Get you some duck fat, about 3 tablespoons and sauté pan large enough to hold the cabbage when sliced.
* Quarter and core the cabbage, slice thin as for cole slaw.
* Chop up a medium size carrot and slice a medium onion. Sauté in the fat for about 5 minutes.
* Add the cabbage a handful at a time tossing to coat with the fat.
* Core and chop a tart apple, add to the pan
* Add about half a cup of water, a generous tablespoon of sherry vinegar or more to taste plus S&P
* Cover the pan and let braise over low heat for 20 minutes or so.

Yum! Duck fat is essential.
